Guide to Truffles

No, not the fungus. But they were actually named after the fungus because of how it resembles the fungus.
Truffles are a French invention thought to be invented between the 1890s and 1920s. The original truffles were a ball of ganache, chocolate and cream, rolled in cocoa.
Rumours say French chef Auguste Escoffier was working on a pastry cream when he accidentally poured the hot cream into a bowl of chocolate chunks. When it had cooled down a bit, he realized he was easily able to form balls with the chocolate paste that resulted.
Over time, many different versions of truffles have been invented by adding sugar, nuts or liquor to the centre ganache. Different countries also have their own versions of truffles. For example, the Belgian truffle (also known as praline): is filled with buttercream, ganache or nut. Other versions of truffles include the American truffle, French truffle and Swiss truffle.Taking a bite into a truffle and letting that soft gooey filling ooze out is the best feeling in the world.
