Guide to Nougat

Nougat is made of honey, sugar, glucose, roasted nuts and dried fruits. The texture of nougat ranges from soft and chewy to hard and crunchy.

There are three basic kinds of nougat. Italian nougat is white and has been around as early as the 15th century in Cremona, Italy. French nougat is made without egg whites and has a firmer, crunchier texture. In Italy this kind of nougat is known as “mandarlato”. German nougat is made from chocolate and nuts.

Legend says that nougat was made for the first time for a banquet in Italy in the 15th century. The nougat was supposedly made in the shape of the “Torrazzo”, the bell tower for the Cremona cathedral. It is name of the bell tower which the Italian word for nougat, “Torrone”, comes from.
